Grafene

Culinary Breakthrough at Grafene

Ben Mounsey, former Head Chef at 2 AA Rosette The Lawns at Thornton Hall, and previously sous chef at Michelin Star restaurant Fraiche in Birkenhead, has taken the culinary helm at Grafene

His new menu, launched this week, offers Ben’s interpretation of fine, contemporary British food, showing British eccentricity with an often-eclectic combination of ingredients. Dishes on his menu include cleverly reconstructed classics and plates to challenge a diner’s perception of familiar foods.  To run alongside this, a cocktail collection featuring newly-crafted drinks has been introduced.

Infused with his humour, sense of fun and inspiration from his region, Ben promises a menu that “avoids the obvious, with surprises throughout. The result is a celebration of flavour; with a meticulous attention to detail and presented with purposeful simplicity.”  [more info]

Fresh after the news that Jamie's Italian and Byron are to close a series of branches, high street stalwart Prezzo are also facing a 'financial restructure' with some of its 262 nationwide branches rumoured to close.  Fuelled by rising labour costs, Brexit-inflated produce supply price increases and the related squeeze on consumer spending, the heavily saturated casual dining market in Manchester is set for a very tough year ahead, based on early indications.
